Coconut Berry Smoothie!

It’s no secret, I love smoothies. The only thing is that it takes up too much time making one! So since I didn’t have school today(due to lots of snow), it was the perfect opportunity to whip up a delicious smoothie. None of my smoothies are ever the same. I always mix it up, and add new things. After digging through my fridge & freezer I had found the perfect ingredients for today’s smoothie!

Ingredients:

1 banana

1-2 strawberries

1 handful of frozen blueberries

1 handful of coconut flakes

1/2 cup of coconut milk (carton)

The coconut milk is very watery by itself, but delicious in smoothies! Here’s what it looks like:

 Then I just blended everything together, poured it in my glass, and enjoyed! 🙂

ROTW-Recipe Of The Week: Pumpkin Pie Cinnamon Rolls

Here’s another ROTW, Pumpkin Pie Cinnamon Rolls:

Here are the ingredients and how to make them!

Ingredients

2 cans Crescent Rounds Dough

    • 4 tablespoons butter, melted
    • 1/2 cup pumpkin puree (not pie filling)
    • 1 tablespoon milk
    • 1/4 cup packed light brown sugar
    • 1/4 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
For the Frosting
  • 4-oz cream cheese, softened
  • 1-1/2 cups powdered sugar
  • 1/4 teaspoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract

Instructions

    • Preheat oven to 375.
    • Lightly grease two 8-inch cake pans with non-stick spray; set aside.
    • Separate dough into 16 rolls and unroll.
    • Brush each piece of dough with melted butter.
    • In a small bowl, mix together pumpkin puree, milk, brown sugar, cinnamon and nutmeg.
    • Evenly divide pumpkin filling and spread over each piece of rolled-out dough.
    • Carefully roll up each dough, lightly pinching seams together.
    • Arrange the rolls 1 inch apart in the prepared cake pan.
    • Bake for 16 to 18 minutes, or until tops are golden brown.
In the meantime prepare the frosting.
  • Place cream cheese in your mixer’s bowl and cream for 1 minute.
  • Gradually add in powdered sugar and continue to beat until well combined.
  • Mix in pumpkin pie spice.
  • Add vanilla and mix until thoroughly combined.
  • Remove pans from oven and immediately brush each roll with frosting.
  • Serve.

Overnight Oats!

Could this be the newest craze? I definitely think so…

Overnight oats are an easy and healthy alternative to oatmeal. Those prepackaged oatmeal packets are full of sugar and just aren’t good for you at all. Overnight oats is when you take plain oats (I like rolled oats) and mix them different liquids to soak up overnight. The most common way to make these oats is to use 1/3 cup of oats, 1/3 cup of milk/almond milk, and 1/3 cup of greek yogurt. Mix it up, find a container, and put it in the refrigerator overnight! In the morning you will have soft creamy oats for you to enjoy! Most people don’t leave it plain like that.. There are endless possibilities to how you want to flavor it. You can add things like:

peanut butter

honey

maple syrup

chia seeds

flax seeds

cinnamon

and of course FRUIT!

After about 10 hours of sleep my overnight oats are ready for me to eat!

I added banana’s, strawberries, and more cinnamon! Doesn’t it look pretty?

This was my first time making overnight oats & they were delicious! I didn’t add nearly enough milk because I didn’t think it needed it. But next time I will definitely add the 1/3 cup like I was supposed to! And whatever you do, don’t add the fruit until the morning, otherwise they will be very soggy and not taste very good. There are numerous possibilities for overnight oats, be creative! If you’re stuck on what kind you want to make google is your best friend. I even saw a pumpkin pie recipe for overnight oats, perfect for fall mornings!

ROTW-Recipe of the Week: Salted Caramel Pecan Cheesecake Bars

I’ve decided to do ROTW, or Recipe of the Week(which I totally made up). Basically once a week I’ll share a recipe that I find by posting it here! And I just want to put out there that some of these recipes aren’t my own, I most likely found them on Pinterest. Like this one!

Salted Caramel Pecan Cheesecake Bars:

Well here’s the recipe and how to make them 🙂

Crust:
3/4 cup graham cracker crumbs
1/4 cup chopped pecans
1/4 cup butter, melted

Cheesecake:
1 (8-ounce) package cream cheese, softened
1/4 cup sugar
1/4 cup sour cream
1 tablespoon all-purpose flour
1 large egg
1 teaspoon vanilla extract
1/3 cup caramel sauce

Topping:
1/4 cup chopped pecans
12-15 Kraft caramel candies
1 tablespoon milk or heavy cream
1/4 teaspoon coarse sea salt

Preheat oven to 350 degrees.
Stir together graham cracker crumbs, pecans, and butter; press into the bottom of a foil lined and lightly greased 8×8-inch baking pan.
Bake for 8 minutes.
Remove from oven, and cool on a wire rack.
Beat cream cheese at medium speed with an electric mixer until smooth.
Combine sugar and flour; gradually add to cream cheese, beating just until blended.
Add sour cream and caramel sauce.
Add egg, beating until blended.
Stir in vanilla.
Pour mixture over prepared crust, spreading evenly to edges of pan.
Bake at 350 degrees for 35 minutes or until set.
Remove from oven, and cool on a wire rack. Sprinkle pecans over cheesecake.
Chill for at least 2 hours.
Place caramel candies, salt, and milk in a microwave safe bowl.
Heat in 30 second intervals until melted and smooth.
Drizzle over cheesecake.

Chocolate Chip Cookie Dough Balls!

I love Pinterest, especially for all the yummy recipes I find. The other day one of the recipes caught my eye & looked really simple to make. Chocolate chip cookie dough balls! And these are made without eggs, so you can eat as much as your heart desires!

I chose to make mine with the greek yogurt, absolutely delicious!

So here I made the cookie dough balls & stuck them on the waxed paper with the forks in them.

Then after 3-4 hours I started melting the chocolate!

After dipping them in the chocolate I put them back in the freezer for 1-2 hours and this is how they came out!

These things are so delicious, easy to make, and easy to eat 😉
Mine didn’t like quite as good as the ones on the website, but hey they still tasted phenomenal!
